Hearty Italian Sausage Soup With Vegetables (One Pot Recipe)

I love a filling one-pot meal, and soup is a great place to pack in a wide variety of colorful vegetables. This hearty, veggie-filled soup with Italian sausage is a nice change from the usual and one I make whenever the weather is cool enough.

Goal for this year: Freeze my garden zucchini (which is always plentiful) so I can make this soup all year while keeping it local and organic (for cheap!).

Hearty Italian Sausage Soup Loaded With Vegetables

Meals that can be cooked and served all in one dish are my absolute favorite kind. Soups are usually that kind of meal. (Do a happy dance for fewer dishes!) The key to pulling off any one-pot meal is packing in lots of veggies and a good protein.

For the vegetables in this soup I use zucchini and yellow squash from the garden, since I always have more of these than I know what to do with! I also add carrots and Italian stewed canned tomatoes. Finally, I toss in some fresh spinach right at the end. If that combination doesn’t appeal to you, you can absolutely switch some of them out, but my crew likes it.

If I’m feeling ambitious and don’t mind a few more dishes since I didn’t dirty very many making dinner, my coconut flour biscuits go really well with this soup.

Hearty Italian Sausage Soup Recipe

One of our favorites, a colorful soup with Italian sausage and bone broth.


  • In a large pot, brown the sausage until it is almost cooked through.
  • While it is cooking mince the garlic, slice the carrots, and dice the zucchini, and yellow squash.
  • Add the minced garlic to the sausage and cook one additional minute.
  • Stir in the broth, tomatoes, and carrots.
  • Simmer 15 minutes.
  • Add the zucchini, yellow squash, black pepper, and onion salt and simmer for another 10-15 minutes.
  • Turn the burner off and add the spinach.
  • Stir to combine and wait for 5 minutes for spinach to wilt.
  • Serve and enjoy!


If your family likes a little heat, try using spicy Italian sausage! Also, feel free to vary the vegetables based on personal preference.
